A Recipe That Will Make You Smile

The memories of just spending time with my dad at home and him cooking specific things made me extremely happy. You see, being the only child after my older sisters moved out from home was a bit hard. I did learn how to keep myself entertained and tried to keep out of trouble...lol


Mom cooked most of the meals and when she allowed me to help her was a treat for me. My dad on the other hand was the one who BBQ'd a lot. I always remember him telling me..." Stay away from the BBQ for it will burn you!" Just one time when I was playing with my dog Lucky, I accidently backed into the very hot BBQ and gave myself a nice large area of burn on my back. Totally tried to hide the fact it didn't hurt and ended up crying anyways. That's when I told the truth that it was an accident. Dad was not mad, he felt bad.


The smell of foods bring back memories for me. Huge connection. God wired me this way. So, when I created this quick recipe to use up a bunch of eggs, the memory came flooding to mind as I was cooking it.


Sure, it is not the healthiest recipe. Though, it turned out tasty and brought back some good memories to me. For my dad use to make me Spam sandwiches as a kid. That and fried blogna sandwiches were the main 2 he made. He would hollar, "Carol do you want a sandwich?" You betcha was my response.

Recipe:

10 eggs

1 can Spam or other meats

1 handful cut up fresh mushrooms or dehydrated ones

Pepper, garlic & onion powder, just a small sprinkle of salt


Crack all the eggs in a bowl then scramble with a fork, add cut up Spam and veggies, add your seasonings. Pour into a heated skillet to meadium and cook until done.
