Today, I thought I would share a variation of cabbage soup. I call it leftoverville soup using cabbage. The last four years were focused on reducing our overall expenses. One area I did this in, was our food budget. I cut it in half if not more. It was super important to have the money back in our pocket book, in order to pay more on our house payment. It worked well and is still working. Our home down to just a handful of months left and we will be mortage free!
Please use what you have on hand. I use a smaller amount of cabbage and whatever protein you have on hand in place of the corned beef. It can be a can of canned chicken, can of corned beef hash. Use your imagination. Enjoy the recipe and make your money stretch and make those homemade meals which will fill your tummy and are healthy.
Recipe:
1/4 section of chopped cabbage
1 cup of protein
2 carrots
1/4 chopped onion
Salt, pepper, garlic powder or one section of fresh garlic chopped,
3 pints of water
1 container or 2 pint jars of beef bone broth. Can use Chicken or vegetable broth too.
Cook any proteins first. Fill a large soup pot with the water and the broth. Turn the heat on high. Add all the chopped up veggies and others not listed on the recipe. Use your creativity. Boil for about 20 minutes then turn heat down to low with a lid on the pot. Allow to simmer for at least 2 hours. Make sure to stir throughtout this time. Serve with homemade bread or rolls.
