Chocolate Cream Pie

As a little girl my Grandmas cousin Laralou would fly from Texas to see my grandparents in Torrance California where they lived. Laralou would have a beautiful chocolate cream pie made just waiting for me. Talk about the most amazing chocolate cream pie ever. Oh, I was allowed to eat a piece for breakfast too. Yeah, I ate strange breakfasts as a kid...lol


About a year ago, I found this simple recipe and all those beautiful memories came flooding back to me. Literally could smell that chocolate pie. Yes, I have made it with a home pie crust. Actually I actually asked my hubby to make the crust. He is man when it comes to making pie crusts. Enjoy this simple homemade chocolate pie.


Recipe:

1/2 cocoa powder

1/4 cup cornstarch, arrowroot or plain flour

3 egg yolks

1 cup sugar

1/4 tsp salt

2 cups milk

1 tsp vanilla

1 prebaked pie crust or your favorite crust recipe


Mix cocoa, cornstarch, beaten egg yolks. Then sugar and salt. Add milk gradually while stirring in a pot over med-high heat on your stovetop. Cook until smooth

Cream pies take some time to thicken, so stir for about 10-15 minues. Stir constantly until thickened. Add the vanilla after you take the pan off the heat. Use the leftover egg whites and make meringue topping.
