Please Let Me Eat Cake

Can you remember what a homemade cake smells like when it’s baking in the oven? That warm, sweet aroma slowly fills every room in the house—making your mouth water before the cake is even out of the pan. For me, those smells bring back so many special memories from my childhood. My mom loved to bake, and let me tell you, she made so many cakes when I was growing up. I’d sit on the counter (probably way too close to the edge, lol) and wait patiently—okay, maybe not so patiently—for her to finish mixing so I could lick the beaters. That sweet, creamy batter was the ultimate treat before the real treat.
Even when she used a boxed cake mix, they always tasted amazing. There was just something magical about them—maybe it was the love she baked into every one. When I became a mom myself, I found myself in her shoes. We didn’t have the budget for store-bought fancy cakes, so I went old-school. I started baking my own, and yes, I used a cake mix at first, too!
But then one day, I stumbled across a simple yet amazing recipe for a classic yellow cake made completely from scratch. It was a game-changer! I tried it, and… I’ve never looked back. That recipe became my go-to for birthdays, celebrations, and even just-because-I-need-cake days. It's moist, rich, and the flavor is out of this world—especially when you use good-quality, organic ingredients. Trust me, it really makes a difference.
Now, I’ll let you in on a little secret: when I’m craving chocolate (which happens more often than I care to admit 😅), I just swap out 1/4 cup of the flour with cocoa powder—and voilà! It becomes the most delicious homemade chocolate cake.
Just last week, I had one of those days. You know the kind—when only a slice of chocolate cake will do. My normal day-to-day meals are packed with nourishing, healthy food, but this day? I needed chocolate. Rich, deep, fudgy chocolate. So I whipped up that same scratch cake recipe, turned it into chocolate, and slathered on the dreamiest, most decadent homemade chocolate buttercream frosting.
Honestly? I was drooling before the cake even made it to the oven 🤤
So today, I’m sharing that special recipe with you. Bake it for someone you love. Or bake it just for you (because you totally deserve it). Use your favorite frosting or get creative and try something new. Have fun with it—and don’t forget to lick the beaters. That’s the best part.
🍰💛 Happy baking, my friend! Let your kitchen smell like love.
Recipe:
2 1/4 cup flour
1 1/2 cup sugar (I use a little less)
3/4 cup milk
3/4 cup butter
3 eggs
2 1/2 tsp baking powder
1 tsp salt
1 1/2 tsp vanilla
Mix all the dry ingredients together. Add the butter and mix well with a pastry blender ( I use it when I make a pie crust) makes the butter in tiny bits. Mix the eggs with the bilk and vanilla. Add this to the dry ingredients. Don't over mix. Pour into a large square cake pan or 2 circular cake pans. Preheat oven to 375 degrees and bake for 20-25 minutes.
Thanks for stopping by and have a blessed day!
